I enjoy green or Puerh tea on the weekend - I let the water boil first and then let it rest for 5 minutes.
I drop a pinch of tea leaves into the tea pot and then add the water which has gone off the boil. I let it brew for about 3 minutes, then pour it into my tea cup (green earthen ware, Chinese script on the side, with no handles) and enjoy it. I keep refilling water into the tea pot, not adding any more tea leaves though, and go through about 3 - 4 cups in the afternoon - completely sets me up when I am sorting the bills or catching up on other bits and bobs.
