Ingredients
- 6 Tetley Earl Grey tea bags
- 4 cups (1 L) water
- ½ cup (120 mL) caster sugar
- 1 cinnamon stick
- 1 strip lemon peel
- 1 tsp (5 mL) vanilla extract
- 4 firm pears, peeled with stems intact
Directions
- Brew the base:
In a medium saucepan, bring the water to a gentle simmer. Add the Tetley Earl Grey tea bags and steep for 5 minutes. Remove tea bags. - Build the poaching liquid:
Stir in the sugar, cinnamon stick, lemon peel, and vanilla. Bring back to a low simmer until the sugar has dissolved. - Poach the pears:
Add the pears, ensuring they are mostly submerged. Simmer gently for 20 to 25 minutes, turning occasionally, until tender but holding their shape. - Serve and enjoy:
Remove pears and allow the liquid to cool slightly. Serve warm or chilled, spooning over a little of the tea syrup.
A Tetley Tip
Reduce the remaining poaching liquid for a few extra minutes to create a richer syrup for drizzling.
