Table of Contents

A gently sweet, tea-infused fruit compote that brings out the best of seasonal produce. Tetley tea and honey create a light, aromatic syrup that works beautifully from breakfast through dessert.

Why you’ll love it

Naturally sweet: Honey and tea enhance the fruit without overpowering it.

All-rounder recipe: Perfect for yoghurt, oats, pancakes, or ice cream.

Seasonal flexibility: Swap fruits throughout the year to keep it fresh.

Ingredients

  • 5 Tetley Green Tea Mango & Passion Fruit tea bags
  • 3 cups (750 mL) water
  • 3 tbsp (45 mL) runny honey
  • 1 tsp (5 mL) vanilla extract
  • 3 cups mixed fruit (peaches, plums, apples, or berries), chopped
  • 1 tsp (5 mL) lemon juice

Directions

  1. Brew the tea:
Bring water to a gentle simmer. Add the Tetley tea bags and steep for 5 minutes. Remove tea bags.
  2. Create the syrup:
Stir honey and vanilla into the tea. Return to low heat until fully combined.
  3. Poach the fruit:
Add the fruit and lemon juice. Simmer gently for 8 to 12 minutes, stirring occasionally, until the fruit is tender but still holds its shape.
  4. Cool and enjoy:
Remove from heat and allow to cool slightly. Serve warm or chilled.
