Ingredients
- 6 Tetley Super Herbal Tropical Turmeric tea bags
- 4 cups (1 L) soy milk
- 2 cups (500 mL) large-flake oats
- 6 tbsp (90 mL) maple syrup, divided
- 2 tbsp (30 mL) chia seeds
- ¾ tsp (3 mL) ground cinnamon, divided
- 2 tbsp (30 mL) butter
- 2 red apples, cored and diced
- 1 tbsp (15 mL) lemon juice
Directions
- Brew the base:
Bring water to a boil and pour over the Tetley tea bags. Steep for 8–10 minutes, then remove the tea bags. Add the brewed tea to warm soy milk and allow to cool completely. - Mix it up:
In a large bowl, stir together the tea-infused soy milk, oats, 4 tbsp (60 mL) maple syrup, chia seeds, and ½ tsp (2 mL) cinnamon. Cover and refrigerate overnight. - Prepare the topping:
In a small saucepan, melt butter over medium heat. Add apples and cook for 3–5 minutes until softened. Stir in the remaining maple syrup, cinnamon, and lemon juice, cooking for another 3–5 minutes until slightly thickened. - Assemble and enjoy:
Divide the oat mixture into four servings and top with warm apple compote. Perfect for cosy mornings, post-yoga breakfasts, or a midday pick-me-up.
